Smashed Potatoes

  • 1 lb baking potatoes
  • 2 tbsps olive oil
  • 1 tsp salt
  • 1/8 tsp black pepper.
Smashed Potatoes
Cut potatoes in half and then cut the halves into quarters so you have triangular 1/8th pieces. In a saucepan, place cut potatoes filled with water. Boil for 20 minutes or until potatoes are cooked. Drain potatoes. Prepare a baking sheet with cooking spray and arrange the potato pieces on it. Lightly smash each piece with a potato masher going down about half way and put the mashed pieced on top of the smashed piece. Repeat for all pieces. Lightly dab each piece with olive oil using a brush. Then, sprinkle each piece with salt and black pepper. Preheat oven to 450. Bake potato pieces for 15 minutes or until lightly browned.
