Slow Cooker Southwestern Chicken Chili

Adapted from General Mills, Inc.

  • 2 cup onions, chopped
  • 1 cup bell peppers, chopped
  • 6 tbsps cornmeal
  • 5 tbsps chili powder
  • 3 tsps oregano
  • 2 lbs chicken breast halves skinless, cut into 1" pieces
  • 32 ozs picante sauce
  • 32 ozs no-salt-added pinto beans, undrained
  • 28 ozs no-salt-added diced tomatoes, undrained
Slow Cooker Southwestern Chicken Chili
In a large saucepan, cook, chicken, onions, and bell peppers until the chicken is no longer pink. Add cornmeal, chili power, and oregano. Mix well. Place into a 6-quart slow cooker. Add picante sauce, beans, and tomatoes. Mix well. Cover and cook for eight hours.
