Shortbread Cherry Brownie Bars

Adapted from

  • Crust:
  • 10 ozs pecan shortbread cookies, crumbled
  • 4 tbsps margarine
  • Filling:
  • 18 ozs reduced fat brownie mix
  • 2 whole eggs
  • 1/4 cup water
  • 1/4 cup olive oil
  • 21 ozs cherry pie filling
Shortbread Cherry Brownie Bars
Preheat oven to 350. Prepare a 13"x9" pan with cooking spray; set aside. To prepare crust, combine cookie crumbs and margarine in a mixing bowl until crumbly. Press onto bottom of prepared pan; set aside. In another mixing bowl, combine brownie mix, eggs, water, and oil. Mix until all is moistened. Pour over crust in pan. Spread pie filling evenly over top. Bake for 30 minutes or until toothpick inserted in center comes out clean.
