Pumpkin Granola Loaves

Adapted from Nestle

  • 2 cups unbleached flour
  • 1 1/2 cups whole wheat flour
  • 3/4 cup granulated sugar
  • 2 tsps baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups lowfat granola
  • 30 ozs pumpkin pie mix
  • 1/2 cup egg whites, slightly beaten
  • 1/4 cup olive oil
  • 1/2 cup lowfat granola, crushed
Pumpkin Granola Loaves
Preheat oven to 350. Prepare two 8" x 5" loaf pans with cooking spray; set aside. In a mixing bowl, combine flours, sugar, baking powder, pumpkin pie spice, baking soda and salt. Mix well. Stir in two cups granola. Add pumpkin pie mix, egg whites, and oil. Mix until all is moistened. Pour pumpkin mixture into flour mixture; stir until just moistened. Spoon batter into prepared loaf pans. Sprinkle with remaining crushed granola. Bake for one hour or until toothpick inserted in center comes out clean. Cool completely.
