Pumpkin Chili

Adapted from

  • 1 lb ground chicken breast skinless
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 15 ozs canned pumpkin
  • 15 ozs canned dark red kidney beans, drained and rinsed
  • 14 1/2 ozs canned diced tomatoes, undrained
  • 1 tbsp chili powder
  • 1 1/2 tsps salt
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
In a large skillet, cook chicken, onions, and bell peppers until chicken is no longer pink. Place mixture into a 3 1/2- quart slow cooker. Add pumpkin, beans, tomatoes, chili powder, salt, garlic powder, and black pepper. Mix well. Cover and cook on low for seven hours, or until heated through.
