Pork & Tomato Ragout

Adapted from Slow Cooker Magic in Minutes

  • 2 lbs boneless pork, cut into 1" pieces
  • 1/4 cup unbleached flour
  • 3 tbsps olive oil
  • 1 1/4 cup chicken broth
  • 2 lbs red potatoes, cut in 1/2" pieces
  • 14 1/2 ozs canned diced tomatoes, undrained
  • 1 cup onions, chopped
  • 1 cup water
  • 1/2 cup celery, chopped fine
  • 1 1/2 tsps salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 3 tsps parsley flakes
Pork & Tomato Ragout
In a small bowl, combine pork pieces and flour. In a large skillet, add mixture and cook until no longer pink. Place in a 6 quart slow cooker; set aside. In the same skillet, stir in chicken broth and bring to a boil. Pour into slow cooker. Add potatoes, tomatoes, onions, water, celery, salt, garlic powder, black pepper, and parsley. Mix well. Cover and cook on low for six hours, or until pork and potatoes are cooked.
