Picnic Macaroni Salad

Adapted from What's for dinner Mrs. Skinner?

  • 8 ozs elbow macaroni, cooked and drained
  • 6 ozs Spam Lite luncheon meat, cubed
  • 1 cup celery, sliced
  • 1/2 cup dill pickle relish
  • 1/2 cup onions, chopped
  • 1/2 cup light mayonnaise
  • 2 ozs pimientos in jar, diced and drained
  • 1 tbsp yellow mustard
In a mixing bowl, combine macaroni, luncheon meat, celery, pickle relish, onions, mayonnaise, pimientos, and mustard. Mix well. Place mixture in a bowl with a tight fitting lid and refrigerate for several hours before serving.
