Peppermint Brownie Bark

Adapted from Land O’Lakes, Inc.

  • 1/2 cup butter
  • 1 oz unsweetened chocolate squares
  • 1/2 cup granulated sugar
  • 1 whole egg
  • 1 cup unbleached flour
  • 1/4 tsp salt
  • 1/4 tsp peppermint extract
  • Glaze:
  • 4 ozs Baker's white chocolate baking squares
  • 1/4 tsp peppermint extract
  • 4 ozs peppermint crunch baking chips
Peppermint Brownie Bark
Preheat the oven to 350. Prepare a jelly roll pan with cooking spray; set aside. In a saucepan, melt butter and chocolate until smooth. Remove from heat. In a mixing bowl, combine egg, flour, salt, and 1/4 teaspoon peppermint extract. Mix well. Add chocolate mixture. Mix until all is combined. Press mixture evenly into the prepared pan. Bake for 10 minutes, or until dry to the touch. Meanwhile, in a liquid measure, melt chocolate and add the remaining peppermint extract. Mix until smooth and pourable. Pour evenly over the chocolate mixture. Sprinkle baking chips evenly over top. Chill in pan for 15 minutes, or until chocolate is set. Cut into bars.
