Pear and Apple Cobbler

Adapted from Quick Cooking Magazine 2004

  • 2 tsps cornstarch
  • 1 tsp cinnamon
  • 2/3 cup refrigerated orange juice
  • 21 ozs apple pie filling
  • 15 1/4 ozs canned pears, drained and rinsed
  • Topping:
  • 1 1/2 cups low-fat baking mix
  • 2 tbsps granulated sugar
  • 1/2 cup fat-free milk
  • 2 tbsps margarine, melted
  • 2 tsps granulated sugar
  • 1 tsp cinnamon
Pear and Apple Cobbler
In a large saucepan, combine cornstarch, one teaspoon cinnamon, and orange juice. Mix well. Add apple pie filing and pears. Bring to a boil. Cook for three minutes, or until thickened. Preheat oven to 350. Prepare a 11"x7" casserole dish with cooking spray. Place fruit mixture into dish evenly. To prepare topping, combine baking mix, two tablespoons sugar, milk, and margarine. Mix well. Drop topping mixture in six mounds on top of fruit mixture in dish. In a small bowl, combine remaining sugar and cinnamon. Sprinkle evenly over top cobbler. Bake for 40 minutes, or until topping is browned.
