                                walnuts, chopped

                                1/2 cup
                                olive oil

                                4     ozs
                                light sour cream

                                1     whole
                                egg
                            
- 
                                1     tsp
                                pure vanilla extract

                                1     cup
                                fresh peaches, sliced
                            
 
                    
             
            
Preheat oven to 400. Prepare 12 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, cinnamon, and walnuts. In a liquid measure, whisk together oil, sour cream, egg, and vanilla extract. Pour mixture into dry ingredients Mix until all is moistened. Fill prepared pans three-quarters full. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
