Peach Gingerbread Muffins

Adapted from

  • 2 cups unbleached flour
  • 2 tsps baking powder
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp cloves
  • 1 cup granulated sugar
  • 1/2 cup sweetened applesauce
  • 1/4 cup apple juice
  • 1/4 cup molasses
  • 1 whole egg
  • 2 tbsps olive oil
  • 16 ozs frozen sliced peaches, chopped
Peach Gingerbread Muffins
Preheat oven 400. Prepare 15 standard muffin cups with cooking spray; set aside. In a mixing bowl, combine flour, baking powder, ginger, cinnamon, salt, and cloves. Mix well. Add applesauce, apple juice, molasses, egg, oil, and chopped peaches. Mix until all is moistened. Spoon batter evenly between muffin pans, filling 2/3 full. Bake for 25 minutes, or until toothpick inserted in center comes out clean.
