Peach Drops

Adapted from Homemade Cookies Cookbook

  • 1/2 cup margarine, softened
  • 1/2 cup light brown sugar, packed
  • 4 ozs neufchatel cream cheese, softened
  • 1 tsp pure vanilla extract
  • 1 1/4 cups unbleached flour
  • 1 1/2 tsps baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup walnuts, chopped fine
  • Frosting:
  • 1/2 cup powdered sugar
  • 1/4 cup peach preserves
  • 1 tbsp margarine, softened
Peach Drops
Preheat oven to 350. In a mixing bowl, combine half cup margarine cream cheese, brown sugar, and vanilla extract until creamy. In another mixing bowl, combine flour, baking powder, cinnamon, salt, and walnuts. Mix well. Add dry ingredients to wet ingredients until all is moistened. Fold in peach slices. Drop by level tablespoons onto prepared baking sheets. Bake for 15 minutes, or until bottoms are lightly browned. Cool. To prepare frosting, combine powdered sugar, peach preserves, and remaining margarine into a food processor, until smooth. Spread evenly onto each cookie.
