Peach Cobbler Batter Cake

Adapted from ACH Food Companies, Inc.

  • 2 1/4 tsps dry yeast
  • 3/4 cup water, warmed 100 to 110 degrees
  • 1 cup granulated sugar
  • 2 cups unbleached flour
  • 1/2 cup margarine, softend
  • 2 whole eggs
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • Topping
  • 4 lbs frozen sliced peaches, thawed and drained
  • 1 cup granulated sugar
  • 1 tsp cinnamon
Peach Cobbler Batter Cake
Prepare a 9"x 13" pan with cooking spray; set aside. In a medium-sized bowl, dissolve yeast and one tablespoon of water. Let stand for ten minutes, or until foamy. Add one cup of flour and mix until smooth. Cover and let rise in a warm, draft-free place for 40 minutes, or until doubled in size. In a mixing bowl, combine margarine, one cup sugar, eggs, vanilla extract, and salt. Mix until all is blended. Stir in yeast mixture and remaining cup flour. Pour into prepared pan. Cover and let rise again for one and half hours, or until doubled in size. Preheat oven to 350. In another mixing bowl, combine peaches, sugar, and cinnamon. Mix well and place evenly onto of dough in the pan. Bake 30 minutes.
