Pasta, Turkey and Spinach Salad

Adapted from Butterball

  • 5 ozs baby spinach
  • 8 ozs turkey light meat, skinless, skinless
  • 5 ozs ziti pasta, cooked
  • 4 tbsps chicken broth
  • 2 tbsps olive oil
  • 3 tsps lemon juice
  • 2 tsps dry mustard
  • 1 tsp salt
  • 1/4 tsp black pepper
Pasta, Turkey and Spinach Salad
In a serving bowl, combine spinach, turkey, and pasta. Mix well. In a liquid measure, combine chicken broth, oil, lemon juice, dry mustard, salt, and black pepper. Pour over spinach mixture. Toss lightly until well coated.
