Paradise Fruit Cake

Adapted from Mr. Food Makes Dessert

  • 18 1/4 ozs yellow cake mix
  • 1 1/2 ozs Dream Whip whipped topping mix, dry
  • 1/2 tsp baking powder
  • 1 c water, cold
  • 1/2 c egg whites
  • 1 tbsp olive oil
  • 1 tsp pure vanilla extract
  • 6 ozs instant vanilla pudding mix
  • 20 ozs crushed pineapple, drained slightly
  • 1 c granulated sugar
  • 8 ozs Cool Whip Free, thawed
Preheat oven to 350. Prepare a 9" x 13" pan with cooking spray; set aside. In a mixing bowl, combine cake mix, dry whipped topping mix, and baking powder. In another mixing bowl, combine water, egg whites, oil, and vanilla extract. Mix dry ingredients with wet ingredients just until moistened. Spread mixture into prepared pan. Bake for 25 minutes or until golden brown. Meanwhile, prepare pudding mixes according to package directions and set aside. In a small saucepan over medium heat, cook pineapple and sugar until the sugar is dissolved completely. Pour mixture over the warm cake; let cool. Spread pudding mixture over top, then whipped topping. Chill until ready to serve.
