Oatmeal Cookies

Adapted from A Better Way to Bake

  • 1 cup unbleached flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 ozs cinnamon applesauce
  • 2 tbsps margarine
  • 1/4 cup egg whites
  • 1 tsp pure vanilla extract
  • 1 1/3 cups rolled oats
  • 1/2 cup raisins
Oatmeal Cookies
Preheat oven to 375. Prepare a baking sheet with cooking spray; set aside. In a mixing bowl, combine flour, sugars, baking powder, baking soda, and salt. Add margarine, egg whites, vanilla extract, oats, and raisins. Mix until moistened. Drop batter by one ounce portions onto prepared baking sheet. Batter will be sticky. Bake for 10 minutes, or until cookies are browned. Cool completely.
