Mexican Turkey and Potato Burrito Casserole

Adapted from Basic American Foods.

  • 2 cups water
  • 3 ozs instant mashed potatoes
  • 1/4 cup fat-free milk
  • 8 ozs turkey light meat, skinless, chopped
  • 1 cup onions, chopped
  • 1 oz low-sodium taco seasoning mix
  • 16 ozs salsa, divided
  • 4 ozs cheddar cheese, shredded
  • 10 whole flour tortillas
Mexican Turkey and Potato Burrito Casserole
Prepare a 9" x 13" pan with cooking spray; set aside. In a saucepan, boil water until a rolling boil. Add mashed potato flakes, and milk. Mix until combined; set aside. In a large skillet, cook turkey and onions until turkey is no longer pink. Add taco seasoning mix and half cup salsa, Cook until bubbly. Add potato mixture and mix well. Spread 1/4 cup mixture onto center of each tortilla. Place seam-side down into prepared pan. Spread remaining potato mixture and remaining salsa evenly over top. Sprinkle top with cheese. Bake for 30 minutes, or until heated through.
