Mexican Chicken Cobbler

Adapted from Casseroles

  • 1 lb ground chicken breast skinless
  • 1 cup onions, chopped
  • 1 oz low-sodium taco seasoning mix
  • 16 ozs salsa
  • 12 ozs frozen corn, thawed
  • 4 ozs cheddar cheese, shredded
  • Biscuit Topping:
  • 1 1/2 cups low-fat baking mix
  • 1/2 cup fat-free milk
Mexican Chicken Cobbler
Preheat oven to 350. Prepare an 11" x 7" casserole dish with cooking spray; set aside. In a large skillet, cook chicken and onions until the chicken is no longer pink. Add taco seasoning mix, salsa, and corn. Cook until heated through. Spread mixture into prepared pan. Sprinkle cheese evenly over the top; set aside. To prepare biscuit topping, combine baking mix and milk until dough forms. Drop by tablespoonfuls over the chicken mixture in the dish. Bake for 35 minutes, or until biscuits are browned.
