Mexicali Cornbread Casserole #2

Adapted from Quick Fixes From Brand Name Mixes

  • 10 ozs frozen mixed vegetables, thawed
  • 8 ozs turkey ham, cooked and cubed
  • 7 ozs Pepperidge Farm cornbread stuffing
  • 2 c fat-free milk
  • 1/2 c egg whites, slightly beaten
  • 1/4 tsp salt
  • 1/8 tsp black pepper
Mexicali Cornbread Casserole #2
Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside. In a mixing bowl, combine vegetables, ham, and stuffing. Spread evenly into prepared dish; set aside. In another mixing bowl, combine milk, egg whites, salt, and black pepper. Mix well. Pour over ham mixture in dish. Bake for 40 minutes or until edges are browned.
