Marshmallow Nut Ice Cream Pie

Adapted from Easy Homemade Desserts with Jell-O Pudding

  • Crust:
  • 1 1/2 c low-fat graham cracker crumbs
  • 1/4 c light margarine, softened
  • 3 tbsps granulated sugar
  • Filling:
  • 7 ozs marshmallow creme
  • 1/4 c walnuts, chopped
  • 1 1/2 c fat-free milk
  • 1 c low-fat chocolate ice cream, softened
  • 6 ozs instant chocolate pudding mix
To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Chill one hour, or until firm. Or, bake in a 350 oven for ten minutes or until lightly browned. Cool on rack before filling. Spread marshmallow cream in bottom of crust, using knife dipped in warm water. Sprinkle with walnuts. In a mixing bowl, combine milk, ice cream and pudding mix. Mix well. Pour into crust. Chill three hours, or until set.
