Maple Bread With Apples & Walnuts

Adapted from Cooking with Carnation Evaporated Milk

  • 3 c unbleached flour
  • 1 1/3 c light brown sugar, packed
  • 1 c whole wheat flour
  • 3/4 c All Bran Cereal
  • 1/2 c walnuts, chopped
  • 4 tsps cinnamon
  • 2 tsps baking soda
  • 2 tsps salt
  • 21 ozs apple pie filling
  • 12 ozs fat-free evaporated milk
  • 3 whole eggs, slightly beaten
  • 1/2 c olive oil
  • 1 tbsp maple extract
Maple Bread With Apples & Walnuts
Preheat oven to 350. Prepare two 8" x 4" loaf pans with cooking spray; set aside. In a mixing bowl, combine unbleached flour, brown sugar, wheat flour, cereal, walnuts, cinnamon, baking soda, and salt. Mix well. Stir in apple pie filling, evaporated milk, eggs, oil, and maple extract. Mix until moistened. Spoon batter evenly between loaf pans. Bake for one hour, or until toothpick inserted in center comes out clean.
