Lemony Carrot Pecan Bread

Adapted from General Mills, Inc.

  • 2 2/3 cups unbleached flour
  • 1 cup granulated sugar
  • 5 ozs All Bran Cereal, crushed
  • 5 ozs fresh carrots, shredded
  • 1/4 cup pecans, chopped
  • 1 tbsp pumpkin pie spice
  • 2 tsps baking powder
  • 1 tsp lemon peel, grated
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsps olive oil
  • 1 tsp pure vanilla extract
  • 2 whole eggs
  • 1/2 cup lemon juice
Lemony Carrot Pecan Bread
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, crushed cereal, carrots, pecans, pumpkin pie spice, baking powder, lemon peel, baking soda, and salt. Mix well. Add oil, vanilla extract, eggs, and lemon juice. Mix until all is moistened. Spread batter into prepared loaf pan. Bake for one hour or until a toothpick inserted in the center comes out clean.
