Crust:

3 ozs
low-fat graham cracker crumbs

1/4 cup
margarine, softened

granulated sugar, softened

Filling:

2 1/2 cup
fat-free milk

1 tsp
lemon peel, grated

1/4 cup
lemon juice

6 ozs
lemon pudding mix, instant

8 ozs
Cool Whip Free, tahwed
To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Reserve 2 tablespoon of mixture. Press remaining mixture firmly in a 9" pie pan. Spread crumb mixture evenly in pie pan. Chill 1 hour, or until firm. Or, bake in a 375 oven for 10 minutes or until edges are brown. Cool on rack before filling. Meanwhile, to prepare filling, combine milk, lemon peel, lemon juice, and pudding mix. Mix until well blended. Fold in whipped topping. Pour immediately into crust. Sprinkle with reserved crumb mixture. Freeze for several hours before serving.
