Lemon Crumb Cake

Adapted from Duncan Hines

  • 18 1/4 ozs lemon cake mix
  • 3 whole eggs
  • 1 1/3 cups water
  • 1 tbsp olive oil
  • 1 tsp lemon peel, grated
  • 1 cup unbleached flour
  • 1/2 cup light brown sugar, packed
  • 1/2 tsp baking powder
  • 3 tbsps margarine
Lemon Crumb Cake
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine cake mix, eggs, water, oil, and lemon peel. Mix until all is moistened. Pour into prepared pan.Meanwhile, combine flour, sugar, and baking powder in a small bowl. Cut margarine in until crumbly. Sprinkle evenly over batter. Bake 35 minutes or until toothpick inserted in center comes out clean.
