Kidney Bean Pumpkin Chili

Adapted from Red Gold, Inc.

  • 1 lb ground chicken breast skinless
  • 1 cup onions, chopped
  • 2 ozs jalapenos, chopped
  • 28 ozs canned diced tomatoes, undrained
  • 30 ozs no-salt-added dark red kidney beans, rinsed and drained
  • 15 ozs canned pumpkin
  • 2 tbsps chili powder
  • 1 tsp salt
Kidney Bean Pumpkin Chili
In a large saucepan, cook chicken, onions, and jalapenos until chicken is no longer pink. Add tomatoes, kidney beans, pumpkin, chili powder, and salt. Mix well and bring to a boil.
