Jack-O-Lantern Pie

  • Crust:
  • 1 1/2 cups chocolate sandwich cookies, crushed fine
  • 1/4 cup light margarine, softened
  • 3 tbsps granulated sugar
  • Filling:
  • 3 ozs orange gelatin powder
  • 1 cup water, boiling
  • 2 cups light vanilla ice cream, slightly softened
  • 6 pcs candy corn
  • 2 pcs black licorice strips
To prepare crust, combine crushed cookies, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Chill one hour, or until firm. Or, bake in a 350 oven for ten minutes or until lightly browned. Cool on rack before filling. To prepare filling, combine orange gelatin powder and boiling water in a mixing bowl. Stir until dissolved, about 2 minutes. Add ice cream to gelatin. Stir until ice cream is melted and mixture is smooth. Place in refrigerator and chill until slightly thick, about 10 minutes. Remove from refrigerator and pour mixture into pie crust. Chill two hours, or until firm. To serve, take pie from refrigerator and make Jack-O-Lantern face on pie with candy corn and licorice.
