Impossible Cheesecake

Adapted from General Mills, Inc.

  • Cheesecake:
  • 3/4 cup fat-free milk
  • 2 tsps pure vanilla extract
  • 2 whole eggs
  • 1 cup granulated sugar
  • 1/2 cup low-fat baking mix
  • 16 ozs fat-free cream cheese, softened
  • Topping:
  • 1 cup light sour cream
  • 2 tbsps granulated sugar
  • 2 tsps pure vanilla extract
Impossible Cheesecake
Preheat oven to 350. Prepare a pie pan with cooking spray; set aside. To prepare cheesecake, combine milk, two teaspoons vanilla extract, eggs, one cup sugar, baking mix, and cream cheese in a mixing bowl. Mix until smooth. Pour mixture into prepared pan. Bake, uncovered, for 45 minutes. Meanwhile to prepare topping, combine sour cream, remaining sugar, and remaining vanilla extract. Mix well. Spread over cooled cheesecake. Chill for several hours before serving.
