                                unsweetened applesauce

                                eggs

                                     1/4 cup         
                                honey

                                baking powder

                                   1     tsp         
                                pumpkin pie spice
                            
- 
                                     1/4 tsp         
                                salt
                            
- 
                                   1     tsp         
                                pure vanilla extract

                                     1/2 cup         
                                carrots, shredded
                            
 
                    
             
            
Prepare a baking sheet with cooking spray; set aside. In a mixing bowl, combine flour, sugar, butter, applesauce, eggs, honey, baking powder, pumpkin pie spice, salt, and vanilla extract. Mix until all is moistened. Fold in carrots. Cover and chill dough several hours. Preheat oven to 325. Shape dough into rounded one inch balls. Place two inches apart onto prepared baking sheet. Bake for 15 minutes, or until edges are lightly browned.
