High Fiber Ten Grain & Bran Bread

Adapted from Bob's Red Mill Natural Foods

  • 2 c whole wheat flour
  • 1 tbsp dry yeast, 1 package
  • 3/4 tbsp salt
  • 2 c water, hot
  • 1 c wheat bran
  • 1/2 c ten grain cereal
  • 1/2 c wheat germ
  • 2 tbsps olive oil
  • 2 tbsps honey
  • 2 c unbleached flour
High Fiber Ten Grain & Bran Bread
In a mixing bowl, combine wheat flour, yeast, and salt. Pour in hot water. Stir to blend. Add wheat bran, ten grain cereal, wheat germ, oil, and honey. Mix well. Add unbleached flour, half cup at a time, until a soft dough forms. On a lightly floured surface, knead dough for five minutes, or until no longer sticky. Place dough in prepared bowl; turning to coat all sides. Cover tightly with plastic wrap and let rise in warm, draft-free place until doubled in size, or for one hour. Turn dough out onto a lightly floured surface and divide in equal halves. Shape each half into a ball and allow to relax for five minutes. Shape into loaves and place each loaf into a prepared 8" x 5" pan. Cover each pan with plastic wrap and allow dough to rise again for one hour. Preheat oven to 400. Bake loaves for 20 minutes; reduce heat to 350 and bake for 20 minutes more, or until breads are a deep brown color.
