Ham & Cheese Puff Pie

Adapted from Hormel Foods, Inc.

  • 8 ozs turkey ham, cooked and cubed
  • 10 ozs frozen spinach, squeezed dry
  • 1/2 cup onions, chopped
  • 1 cup egg whites, slightly beaten
  • 3/4 cup unbleached flour
  • 3 ozs reduced fat Swiss cheese, shredded
  • 3/4 cup fat-free milk
  • 1 tbsp yellow mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper
Preheat oven to 425. Prepare a 2-quart casserole dish with cooking spray. In a mixing bowl, combine ham, spinach, and onions. Spread mixture evenly into prepared dish. In another mixing bowl, combine egg whites, flour, cheese, milk, mustard, salt, and black pepper. Mix well. Pour over ham mixture in dish. Bake for 35 minutes or until puffed and browned.
