Gingerbread Snowflakes

Adapted from McCormick & Company

  • 3 cups unbleached flour
  • 2 tsps ginger
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup margarine, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup molasses
  • 1 tsp pure vanilla extract
  • 1 whole egg
  • Frosting:
  • 16 ozs meringue powder
  • 1/2 cup water, hot
Gingerbread Snowflakes
Prepare baking sheets with cooking spray; set aside. In a smaller bowl, combine flour, ginger, cinnamon, baking soda, nutmeg, and salt; set aside. In a mixing bowl, combine margarine, brown sugar, molasses, vanilla extract, and egg. Mix well. Add flour mixture and combine until all is moistened. Wrap dough in plastic wrap and chill for overnight. Preheat oven to 350. Roll the dough into 1/8" thickness. Cut with snowflake-shaped cookie cutters. Place one inch apart onto prepared baking sheets. Bake for ten minutes. To prepare frosting, combine powdered sugar, meringue powder, and water in a mixing bowl. Mix until peaks form, or for ten minutes. For a thinner frosting, add a little water, a drop at a time, until the consistency of honey. Spread frosting onto cookies and decorate as desired.
