Garlic Chicken Caesar Salad

Adapted from Healthy Choice Recipe Creations

  • Dressing:
  • 10 1/2 ozs cream of roasted garlic soup
  • 1/2 cup chicken broth
  • 1/4 cup white vinegar
  • 2 tbsps parmesan cheese
  • 1 tbsp low-sodium worcestershire sauce
  • 1/2 tsp salt
  • Salad:
  • 2 heads iceberg lettuce, torn into pieces
  • 18 ozs chicken breast strips, cooked
  • 1/2 c croutons
  • 2 tbsps parmesan cheese
In a food processor, combine soup, chicken broth, vinegar, two tablespoons parmesan cheese, and worcestershire sauce. Process until smooth and blended. In a mixing bowl, combine lettuce and one cup dressing. Toss to coat well. To serve, top each salad evenly with chicken strips, croutons, and remaining parmesan cheese.
