Fudge Stripes Coffee Cake

Adapted from The J.M. Smucker Company

  • Batter:
  • 18 1/4 ozs yellow cake mix
  • 8 ozs reduced fat fudge striped cookies, crushed
  • 3 3/8 ozs instant vanilla pudding mix
  • 3 tbsps olive oil
  • 3 tbsps water
  • 4 ozs light sour cream
  • 3 tsp cinnamon
  • 1 tsp pure vanilla extract
  • Glaze:
  • 1 cup powdered sugar
  • 3 tbsps water
Fudge Stripes Coffee Cake
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a mixing bowl, combine cake mix, cookies, pudding mix, oil, water, sour cream, cinnamon, and vanilla extract. Mix until all is moistened. Pour batter into prepared pan. Bake for 30 minutes, or until toothpick inserted in center comes out clean. Cool cake completely. Meanwhile to prepare glaze, combine powdered sugar and water in a liquid measure. Mix until smooth. Pour evenly over cooled cake.
