Flounder and Spinach Bake

Adapted from Quick & Easy Recipes

  • 10 ozs frozen spinach, thawed and drained
  • 3 ozs seasoned croutons, coarsely crushed
  • 12 ozs canned corn, drained
  • 1 oz reduced fat Swiss cheese, shredded
  • 3 tbsps water
  • 1 whole egg
  • 1 lb frozen flounder fillets, thawed
  • tsp salt
  • 1/2 tsp black pepper
  • 1 whole egg
  • 2 ozs reduced fat Swiss cheese, shredded
Flounder and Spinach Bake
Preheat oven to 425. Prepare a 11"x7" dish with cooking spray; set aside. In a mixing bowl, combine spinach, croutons, corn, one ounce s of cheese, water, and egg. Mix well. Spread spinach mixture evenly into prepared dish. Arrange fish fillets over spinach mixture, overlapping if needed. Sprinkle with salt, black pepper, and remaining cheese. Cover and bake for 30 minutes, or until fish flakes easily.
