Fig Streusel Coffeecake

Adapted from Fiber for a Healthy Life

  • Topping:
  • 3/4 cup All Bran Cereal
  • 3 tbsps unbleached flour
  • 1/2 tbsp cinnamon
  • 2 tbsps margarine, softened
  • Batter:
  • 1 cup All Bran Cereal
  • 1 cup unbleached flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3 tbsps olive oil
  • 1 cup granulated sugar
  • 2 whole eggs
  • 12 ozs fat-free plain yogurt
  • 6 ozs dried figs, chopped
Fig Streusel Coffeecake
To prepare topping, combine 3/4 cup cereal, three tablespoons flour, brown sugar, half tablespoon cinnamon, and margarine. Mix with pastry blender, until crumbly; set aside. Preheat oven to 350. Prepare a 2 quart baking dish with cooking spray; set aside. To prepare batter, combine remaining cereal, remaining flour, baking soda, salt, and remaining cinnamon in a mixing bowl. Mix well and set aside. In another mixing bowl, combine oil, sugar, eggs, and yogurt. Mix well. Add flour mixture and figs. Mix until all is moistened. Spread half the batter into prepared pan. Sprinkle half the crumb mixture evenly over top. Repeat. Bake for 40 minutes, or until toothpick inserted in center comes out clean.
