Fig & Honey Pecan Bread

Adapted from Coffee Cakes and Quick Breads

  • 3 tbsps olive oil
  • 1/2 cup honey
  • 1/2 cup granulated sugar
  • 3/4 cup low-fat buttermilk
  • 2 whole eggs
  • 2 cups unbleached flour
  • 1 tbsp baking powder
  • 8 ozs dried figs, chopped
  • 1/4 cup pecans, chopped
  • 1 tbsp orange peel, grated
Fig & Honey Pecan Bread
Preheat oven to 325. Prepare a 8"x4" loaf pan with cooking spray; set aside. In a mixing bowl, combine oil, honey, sugar, buttermilk, and egg. Mix well. Add flour, baking powder, dried figs, walnuts, and orange peel. Mix until all is moistened. Pour batter into prepared pan. Bake for 50 minutes, or until toothpick inserted in center comes out clean.
