Fig and Bran Muffins

Adapted from Valley Fig Growers

  • 1 1/4 cup unbleached flour
  • 1/2 cup whole wheat flour
  • 5 ozs All Bran Cereal
  • 2 tsps baking soda
  • 1 tbsp cinnamon
  • 1/2 tsp salt
  • 2 whole eggs
  • 1 cup light brown sugar, packed
  • 3 tbsp molasses
  • 1 tsp pure vanilla extract
  • 3 tbsps olive oil
  • 2 c fat-free milk
  • 6 ozs dried figs, chopped
Fig and Bran Muffins
Preheat oven 400 degrees. Prepare 12 standard muffin pans or smaller pans with cooking spray; set aside. In a shallow bowl, combine flours, baking soda, cereal, cinnamon, and salt; set aside. In a mixing bowl, combine eggs, brown sugar, molasses, and vanilla extract, oil, and milk. Mix until all is moistened. Add flour mixture and figs to wet ingredients. Mix well. Fill each standard muffin pan 2/3 full with batter. Bake for 20 minutes, or until toothpick inserted in center comes our clean.
