Festive Coconut Fruitcake

Adapted from Complete Cake Mix Magic

  • 32 ozs candied fruit mix
  • 1 1/2 cups raisins
  • 1 1/2 cups sliced almonds
  • 1 1/2 cups coconut, toasted
  • 1/3 cup unbleached flour
  • 18 1/4 ozs white cake mix
  • 3 ozs instant vanilla pudding mix
  • 3 whole eggs
  • 1/2 cup water
  • 2 tbsps olive oil
  • 1 tsp pure vanilla extract
Festive Coconut Fruitcake
Preheat oven to 300. Prepare three 8"x4" loaf pans with cooking spray; set aside. In a mixing bowl, combine candied fruit, raisins, almonds, coconut, and flour. Mix well; set aside. In another mixing bowl, combine cake mix, pudding mix, eggs, water, oil, and vanilla extract. Add fruit mixture. Mix well. Spread batter evenly among loaf pans. Bake for 1 1/2 hours, or until toothpick inserted in center comes out clean.
