Favorite Vegetable Soup

Adapted from American Diabetes Association

  • 1 lb ground chicken breast skinless
  • 1 cup onions, chopped
  • 56 ozs canned diced tomatoes, undrained
  • 3 cups water
  • 32 ozs frozen vegetable soup mix
  • 2 tbsps pizza seasoning
  • 2 1/2 tsps salt
  • 1/2 tsp black pepper
  • 1/8 tsp crushed red pepper
  • 1/4 cup brown rice
Favorite Vegetable Soup
In a large saucepan, cook chicken and onions until the chicken is no longer pink. Add tomatoes, water, vegetable soup mix, pizza seasoning, salt, black pepper, and crushed red pepper. Bring to a boil. Reduce heat and simmer for 20 minutes. Add rice and cook through.
