Down Home Macaroni and Cheese

Adapted from Incredibly Easy Recipes

  • 3 tbsps margarine
  • 1/4 cup unbleached flour
  • 1 cup fat-free milk
  • 1/2 tsp salt
  • 5 ozs Velveeta Light Loaf, cut into pieces
  • 10 ozs elbow macaroni, cooked and drained
  • 2 ozs buttery crackers, crushed
Preheat oven to 350. Prepare a 2-quart casserole dish with cooking spray; set aside. Melt margarine in a medium saucepan. Whisk in flour and cook for two minutes, stirring constantly. Gradually add milk and salt. Cook until mixture boils and thickens; stirring constantly. Add cheese pieces and cook three minutes or until melted and smooth. Add cooked macaroni. Mix well. Spoon mixture into prepared dish. Sprinkle top evenly with cracker crumbs. Bake for 20 minutes or until heated through.
