Crunchy White Chocolate Banana Coffee Cake

Adapted from Complete Cake Mix Magic

  • Cake:
  • 15.25 ozs white cake mix
  • 3 ozs instant vanilla pudding mix, instant
  • 2 whole eggs
  • 1/2 cup egg whites
  • 1 cup bananas, mashed, 2 bananas
  • 1 tbsp olive oil
  • 6 ozs white chocolate chips
  • Topping:
  • 3/4 cup almonds, chopped
  • 1 cup light brown sugar
  • 2 tbsps margarine, melted
Crunchy White Chocolate Banana Coffee Cake
Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. To prepare cake, combine cake mix, vanilla pudding, eggs, egg whites, bananas, and oil in a mixing bowl. Mix until all is moistened. Add chocolate chips. Spread batter evenly into prepared pan. Meanwhile, to prepare topping, combine almonds, brown sugar, and melted margarine. Mix until crumbly. Place evenly over batter in pan. Bake for 40 minutes, or until toothpick inserted in center comes out clean.
