Cookies & Cream Brownies

Adapted from RDA Enthusiast Brands

  • Layer:
  • 8 ozs fat-free cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 whole egg
  • 1/2 tsp pure vanilla extract
  • 4 tbsps olive oil
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup cocoa powder, sifted
  • 2 whole eggs
  • 1/2 cup unbleached flour
  • 1 tsp baking powder
  • 10 pcs reduced fat chocolate sandwich cookies, crushed
  • 4 pcs reduced fat chocolate sandwich cookies, chopped
Cookies & Cream Brownies
Preheat oven to 350. Prepare a brownie pan with cooking spray; set aside. To prepare cream cheese layer, combine cream cheese, 1/4 cup sugar, and vanilla extract. Mix until smooth; set aside. To prepare brownie layer, combine oil, remaining sugars, cocoa powder, eggs, flour, and baking powder. Mix until all is moistened. Fold in crushed cookies. Spread into the prepared pan. Spoon cream cheese layer evenly over top. Sprinkle remaining chopped cookies over top. Bake for 30 minutes, or until toothpick inserted in center comes out clean.
