Cocoa Branana Mini Muffins

Adapted from Fiber For a Healthy Life

  • 1 c unbleached flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 2 tbsps cocoa powder
  • 1/2 c granulated sugar
  • 1 1/2 c All Bran Cereal, original
  • 3/4 c fat-free milk
  • 1/3 c egg whites
  • 2 tbsps olive oil
  • 1 c bananas, sliced
Preheat oven to 400. Prepare 20 miniature muffins cups with cooking spray and flour; set aside. In a mixing bowl, sift together flour, baking powder, salt, cocoa powder, sugar, and cereal; set aside. In another mixing bowl, combine milk, egg whites, and oil. Add to dry ingredients. Mix until moistened. Fold in sliced bananas. Spoon one and half ounces of batter into each prepared cup. Bake for 20 minutes, or until lightly browned on top.
