Cincinnati Chili

Adapted from New World Pasta Company

  • 1 lb ground chicken breast
  • 1/2 c onions, chopped
  • 1 tbsp cocoa powder
  • 2 tsps chili powder
  • 3/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1/8 tsp cayenne pepper
  • 28 ozs canned whole tomatoes, undrained
  • 6 ozs tomato paste
  • 15 ozs canned dark red kidney beans, drained
  • 16 ozs angel hair spaghetti, cooked
In a large saucepan, cook chicken and onions until chicken is no longer pink. Add cocoa powder, chili powder, salt, cinnamon, allspice, and cayenne pepper. Mix well. Stir in cut up tomatoes and tomato paste. Bring to a boil. Reduce heat and simmer for 30 minutes. To serve chili, 1 way plain, 2 ways, top with beans, 3 ways, over hot pasta, 4 ways sprinkle with onions, and 5 ways with cheese.
