Chocolate Fig Banana Bread

Adapted from Valley Fig Growers

  • 2 cups unbleached flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups bananas, mashed, 3 bananas
  • 2 whole eggs
  • 3 tbsps olive oil
  • 1 tsp pure vanilla extract
  • 8 ozs dried figs, chopped
  • 3 ozs mini chocolate chips
Chocolate Fig Banana Bread
Preheat oven to 350. Prepare a 9"x5" loaf pan with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. In another mixing bowl, combine bananas, eggs, oil, and vanilla extract. Add to dry ingredients. Mix until all is moistened. Add chopped figs and chocolate chips. Spread batter evenly into prepared pan. Bake for one hour, or until toothpick inserted in center comes out clean.
