Chocolate Chip Cookie Banana Muffins

Adapted from Kraft Foods, Inc.

  • 1 1/4 cups unbleached flour
  • 3 tbsps walnuts, chopped
  • 1/3 cup light brown sugar, packed
  • 3 ozs chocolate chip cookies, crushed fine
  • 1 tbsp baking powder
  • 1 cup bananas, mashed, 2 bananas
  • 1/2 cup fat-free milk
  • 3 tbsps olive oil
  • 1 whole egg
  • Topping:
  • 2 ozs chocolate chip cookies, crushed fine
Chocolate Chip Cookie Banana Muffins
Preheat oven 400. Prepare 12 standard muffin pans with cooking spray; set aside. In a mixing bowl, combine flour, walnuts, brown sugar, four ounces of cookie crumbs, and baking powder. Mix well. Add bananas, milk, oil, and egg. Mix until all is moistened. Spread batter evenly between prepared muffin pans. Sprinkle with remaining cookie crumbs. Bake for 20 minutes or until the toothpick inserted in the center comes out clean.
