Chocolate Chip Banana Mini Loaves

Adapted from Land O' Lakes, Inc.

  • 1 1/2 cup unbleached flour
  • 3/4 cup granulated sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups bananas, mashed, 2 1/2 bananas
  • 3 tbsps olive oil
  • 2 whole eggs
  • 1 tsp pure vanilla extract
  • 6 ozs semisweet chocolate chips
Chocolate Chip Banana Mini Loaves
Preheat oven to 350. Prepare 12 mini loaf pans with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking soda, and salt. Mix well. Add bananas, oil, eggs, and vanilla extract. Mix until all is moistened. Fold in chocolate chips. Spoon batter 3/4 full into each loaf pan. Bake for 20 minutes, or until a toothpick inserted in center comes out clean.
