Chocolate Chip Banana Bread #2

Adapted from I Love Chocolate Cookbook

  • 3 cups unbleached flour
  • 2 cups granulated sugar
  • 2 tsps baking powder
  • 1 tsp salt
  • 1/2 cup olive oil
  • 1 1/2 cups bananas, mashed, 3 bananas
  • 4 whole eggs
  • 2 tsps pure vanilla extract
  • 1 cup semisweet chocolate chips

Preheat oven to 350. Prepare two 9"x5" glass loaf pans with cooking spray; set aside. In a mixing bowl, combine flour, sugar, baking powder, and salt. Mix well. Add bananas, eggs, vanilla extract, and chocolate chips. Mix until all is moistened. Pour batter evenly between prepared pans. Bake for one hour, or until toothpick inserted in center comes out clean.
