Chili Macaroni

Adapted from

  • 1 lb ground chicken breast
  • 1/2 c onions, chopped
  • 4 ozs jalapeno peppers, diced and undrained
  • 14 1/2 ozs Mexican style stewed tomatoes
  • 2 c canned tomato juice
  • 2 tsps chili powder
  • 1 1/4 tsps salt
  • 1 c wagon wheel pasta
  • 1 c frozen green beans, thawed
In a large saucepan, cook chicken, onions, and peppers until chicken is no longer pink. Add tomatoes, tomato juice, chili powder, and salt. Bring to a boil. Stir in pasta and beans. Return to a boil; reduce heat. Cover and simmer for 15 minutes, or until pasta is done and green beans are tender.
