Chicken Vegetable Soup

Adapted from Best Loved Recipes of All Time

  • 1 lb ground chicken breast skinless
  • 1 cup onions, chopped
  • 10 ozs frozen sliced carrots, thawed
  • 4 cups vegetable juice
  • 4 cups water
  • 1 1/2 cups bow tie pasta, uncooked
  • 2 tsps salt
  • 1 tbsp pizza seasoning
  • 10 ozs frozen spinach, thawed
Chicken Vegetable Soup
In a large saucepan, cook chicken and onions until chicken is no longer pink. Stir in carrots, juice, water, pasta, and pizza seasoning. Mix well and bring to a boil. Cover and simmer for 20 minutes, or until carrots are tender. Add spinach and cook for ten minutes.
